Sweet Potato Sour

*Sweet potato butter wash: over medium heat add 4 oz (1 stick of butter) 2 oz of sweet potato puree to a skillet. Stir until incorporated well and has a nuttiness aroma. Pour the skillet mixture into a pitcher of 750ml bottle of Breckenridge Sherry Cask Finish. Place in freezer 8 hours. Skim and strain off solids. Bottle and refrigerate.

*Brown sugar simple syrup: over medium heat, add 1 cup water and 1 cup light brown sugar. Stir until sugar is dissolved. Let cool, bottle and refrigerate.
